Back story - it has been probably 12 years since I last built a PC - used to be a routine thing back then for work - My daughter is a Junior at MTSU in the video and film production major.
She called the other day and said she knew what she wanted for Christmas and our next Father/Daughter build project (we have built a Telecaster, Jazzmater and a couple Fender Clone amp). She is frustrated by some of the things her friends can do their PC that she can't on her Macbook.

So after running several PC builds through the generator at different price points, and quite a bit of reading and youtube watching I think I have build in mind and I am hoping you fine folks can tell me if I am barking up the right tree.

I am in the US so all will be Amazon or Newegg most likely
I really don't have a budget but around $1500 seems to be a spot that would get her something that would last through college and a couple years after.
Fire away no concern about hurting my feelings.

That's so sweet!
The build seems quite balanced to me overall and you've clearly done good research. I'd recommend grabbing an aftermarket CPU cooler like the CoolerMaster Hyper 212 if noise is a factor at all. You could also drop down to a B550 motherboard to save a bit more money if you don't need the extensibility of the X570 platform.
What applications will she be primarily running?

Ah, in that case I'd definitely look into the RTX 2060 Super if you can snag one for a reasonable price. I saw some cool deals floating around on Prime Day. It's not significantly faster, but the performance bump will come in handy. Here's a benchmark run from Puget :
