Building a blender, photoshop, ai rendering workstation

Hi! I'm looking to build a pc in the 2000$ range with the intent to do a lot of intense modeling and rendering in blender sometimes on the cpu intensive side and sometimes gpu intensive side. my workflow will involve multitasking with photoshop. both my photoshop files and blender files can get pretty huge- easily in the multiple gigabyte size range. i am also hoping to do some local ai rendering on my gpu using apps like stable diffusion. i checked the section on blender pc builds and modified it a bit (first list below) because i couldnt find all the parts in stock (i also upped the ram) it came out to a more expensive build than when i used the pc part picker (second list below). can you advise which build may be better or if there may be any issues with the parts i swapped out? or if i would need more power or better cooling for the second build? also the auto part picker said there may be an issue with the high profile ram and the cpu cooling fan... ? any advice? thanks for your time!!

Both are great builds. The Intel build does have a slower SSD, so if you're moving around a lot of huge files, the 980 Pro might be the better choice for you. I'd also go with a 4x 16GB RAM KIT instead of two 2x16GB Kits, as modules in KITs are factory pre-tested and are known to work properly in sync.

Otherwise, both builds will perform pretty much the same, and either one will do just fine for the workloads you listed.
