Need a CPU to do digital art and animation, is this all large enough?

Looks like a good build. You could get a B550 Motherboard instead of an x570. The 2TB SSD isn't really necessary, 1TB would suffice for some time, and you might consider a more powerful PSU just to be on the safe side in case you upgrade some components in the future like 650W.
