I want to use the 12th gen intel CPU, either i5 12600k or i7 12700kf, and want to use a better GPU -- 3060ti or better. I don't think I need HDD storage and SSD can be smaller. what are the required changes for this build?

Switch the motherboard to a Z690 board (DDR4 if you're just gaming). Also, switch the case to something more reasonable (price-wise); the Phanteks one is overpriced atm. Re-arrange storage to suit your storage needs. A crucial P1 or Western Digital Blue SN550 should work just fine for you.
That should do it :)
