I'm choosing between 10700k/10900k or 5900x/5950x.
My priorities:
Highest fps for animation playback in viewport (solid view)
Shortest initialization time before render starts and quickest compositor effects (denoise/glare/lens distortion) after, to minimize GPU downtime during animation rendering
I don't care about CPU rendering at all, using only GPU rendering (cycles optix)
Very rarely using sculpting, particles, physics simulations.
Judging by reviews of new ryzen is usually faster, but some programs just work better on intel so I'm not sure. Sadly couldn't find any benchmarks for viewport animation playback performance.
