I’m fairly confident that this all fits together and works nicely. Just wanted to ask how well you all reckon it would run games.

Looks good to me and it will also do well in games. Both the 3700X and 5600XT perform nicely in almost all titles. It'll depend on the res, quality and targeted fps but you should be able to play all games at decent fps.
