i'm new to building a PC and I've probably got information overload.

My build is for 3D modeling (Blender, Daz3d, Photoshop, Zbrush) - I'll never use it for gaming.

I was putting the GPU budget around $300-$400 and if I understand correctly, i should go for the highest clock speed and the core count is much less important. So I could get a Ryzen 3600 rather than something like a Ryzen 3800, or should i put more money (yikes) and get a Ryzen 7 CPU.

Here is my parts list so far if it helps.

I'd skip the 3000-series and go for the Ryzen 5000 series. You can grab a Ryzen 5 5600X (6 cores) or a Ryzen 7 5800X (8 cores) without changing anything else in your build :) They'll perform much better when working within a viewport.
You don't need an expensive AIO cooler for those processors, btw. You can cut costs there, by grabbing a good air cooler from either Noctua or beQuiet.
