I've got this build from PC-builder tool. I'll just going to add 64GB more RAM.
But I have doubts - do I really need 1200w power supply? PC-builder shows estimated wattage 599W.
And do you have else any suggestions?

Not really, the builder might've picked that as it found the 1200W discounted by a good margin, making it a better value than lower wattage models. You'll need around 850-1000W with that setup.

CPU Cooler: be quiet! Dark Rock Pro 4 ($89.90)

Also, switch this out to the Noctua nh-d15 instead.
